Easy Spanish Rice

How many times have you been cooking up something for dinner such as tacos, burritos, or quesadillas, and realized you don't have any more of those yummy packets of Spanish rice (that go so perfectly with pretty much anything) left in the pantry??  I am the only one that this has happened too?  Ok, even if you have no idea what I am talking about right now, you should still keep reading to find out this EASY Spanish Rice recipe!!

Even though we may not always have Spanish or Taco Rice, we do, however, usually always have some type of rice in the pantry.  Whether its the kind of rice you boil or microwave, and whether it's whole grain, brown, or white, ANY kind of rice will work for this recipe!!  If you happen to have Ready Rice on hand, you can create this dish in under 2 minutes!  Wow!!!  Talk about a quick side dish!

  • 1 cup rice, uncooked
  • 1 cup salsa
  • 1/4 teaspoon garlic powder

  1. Cook rice according to package directions.  (If using Ready Rice, use entire package)
  2. Add salsa, garlic powder, and salt and pepper to rice and stir.
  3. Serve warm with your favorite dish!

*This is delicious with Quick Chicken and Cheese Quesadillas!

To Freeze:

To Thaw:
Remove rice from freezer the night before you wish to use it.

  1. Do you make your own salsa or just grab a jar at the store?

    1. If I have homemade on hand I definitely prefer it! Store-bought works great too! Whichever you happen to have handy can be used in this recipe!
